This was a pretty good eveningmeal we prepared yesterday. We are quite found of sweet potatoes and ate a lot of it in Spain where it is a common vegetable in autumn/winter.
You bake the sweet potatoes in the oven for about an hour. They should be soft and sometimes the "caramel" leaks out as well. Then you mix some fetacheese with a little bit of creme fraiche that you stuff it with together with some black olives and thyme.
